When the summer heat shows up, and I stop wanting to be in the kitchen. I really don’t even like to eat a heavy meal some days, so salads are the best cure for both problems! Besides, I’ve gained so much weight…and it wouldn’t hurt me to eat a little lighter anyway. (There’s really no question as to why my butt’s so big!)
Salads that are strictly greens, doesn’t generally keep me satisfied for long, but add a tiny bit of pasta, cheese or meat…and that will carry me a bit longer.

I’m not sure I’ve ever eaten a salad I didn’t love. I sincerely believe….I might be a rabbit. The rabbits in my yard, eat better than I do. And…my flower beds are living proof of that this year.

Oh my!…all of these salads look amazing, so thanks for all the links. 🙂 I also like my mom’s green bean salad which is just chopped tomatoes, sliced onion, and green beans (all fresh from the garden) tossed in homemade light Italian dressing and chilled in fridge at least 4 hours…yum! I can completely relate to eating too much this winter and needing to lighten up…plus when it’s really hot, who wants to eat heavy? My family also eats a lot of grilled veggies and fruits during the hot days…just ate grilled shrimp and pineapple last night! Happy Friday!
